Pineapple Squares

Pineapple Squares
(makes 2 dozen)
1/2 cup unsweetened pineapple juice
1/4 teaspoon orange extract
3/4 cup juice-packed canned pineapple chunks, drained
1 teaspoon baking powder
1 teaspoon baking soda
1 large egg
1 Tablespoon vegetable oil
1. Preheat the oven to 350 F
2. Spray a square 8-inch baking dish with aerosol spray.
3. In a food processor or blender - puree 1/4 cup of the pineapple chunks.
4. In a bowl - next take the pureed pineapple you just made, the egg, some pineapple juice, oil, orange extract and blend together.
5. Continuing with the mix in the bowl - you just prepared. Add the baking powder, baking soda, flour and mix well... turn mixer off...
and then gently fold in the remaining 1/2 cup of pineapple chunks...
6. Gently poor the batter into the prepared baking dish.
7. Smooth the top by gently shaking the dish.
8. Bake for 25 minutes - until a knife inserted into the middle - comes out clean.
9. Cool.
10. Cut into squares. Make about two dozen squares.
